Apple Spread Potato Cakes - Gina's Gourmet Pantry
  • 1½ cups leftover mashed potatoes
  • ¼ cup all-purpose flour
  • 1 egg
  • 1 jar (9 oz) Gina's Gourmet Pantry Spread of your choice. We recommend: Cherry, Apple, Blueberry or Pepper Jelly 


Mix ingredients. Heat frying pan over medium-high. Coat pan with olive oil. Drop pancakes into pan (any size you'd like). Flip pancakes when the edges start to brown. Cook until golden brown. Serve immediately and top with apple spread.
