Pumpkin Lentil Soup - Gina's Gourmet Pantry
Ingredients:
  • 6 cups chicken broth
  • 3 cups fresh kale chopped
  • 2 cups dried lentils rinsed
  • 2 cups potatoes peeled and diced
  • 1 cup carrots peeled and diced
  • 1 onion chopped
  • 1 cup water
  • ¾ cup Gina’s Gourmet Pantry Pumpkin Spread
  • 2 garlic cloves minced
  • 1 tablespoon ground cumin
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon red pepper flakes

Directions:

In a frying pan, add olive oil and butter and sauté onion over medium heat until translucent. In a 6-quart slow-cooker, add onion, chicken broth, lentils, kale, potatoes, carrots, water, pumpkin spread, garlic, cumin, oregano, smoked paprika, red pepper flakes, salt and pepper to taste. Cook on high for 3 to hours.
